Two clocks matter for a holiday turkey: how long it needs to thaw safely in the fridge, and how long it roasts once it is in the oven. This calculator handles both from the bird's weight so nothing is still frozen on the big day.
How it works
Fridge thaw is about 24 hours per 4-5 lb; roast time is weight times minutes per pound (more if stuffed). Always confirm 165 F.
Fridge thawing runs about 24 hours per 4–5 pounds, so a 15 lb turkey needs close to four days. Roasting at 325°F is estimated at about 13 min/lb unstuffed and 15 min/lb stuffed — stuffing adds time because the cavity heats slowly and must reach a safe temperature too.
The numbers are a schedule, not a finish line. A turkey is done when the thickest part of the thigh hits 165°F (and the stuffing center, if stuffed). Start checking before the estimated time is up, since covered birds, brined birds, and oven quirks all shift the real timing.

Worked examples
A 15 lb unstuffed turkey. → About 3.75 days to thaw; roughly 3 hr 15 min to roast at 325°F
15 ÷ 4 ≈ 3.75 days; 15 lb × 13 min/lb = 195 min = 3 hr 15 min.
A 20 lb stuffed turkey. → About 5 days to thaw; roughly 5 hr to roast
20 ÷ 4 = 5 days; 20 lb × 15 min/lb = 300 min = 5 hr.
Tips & gotchas
- Never thaw a turkey on the counter — the outside enters the unsafe temperature zone long before the center thaws. The fridge is the safe default.
- In a hurry, cold-water thawing works at about 30 minutes per pound, changing the water every 30 minutes, but it demands attention and is messier than the fridge.
- Tent the breast with foil if it browns before the thigh reaches temperature, so the white meat doesn't dry out waiting on the dark.
- Let the bird rest 20–30 minutes after roasting; a large turkey holds a lot of carryover heat and the juices need time to settle.
FAQ
How early should I take the turkey out of the freezer?
Plan on about one day of fridge thawing for every 4–5 pounds. A 15 lb bird needs roughly four days, a 20 lb bird closer to five. Start a day early — a partially frozen turkey roasts unevenly.
Why does a stuffed turkey take longer?
The stuffing fills the cavity and slows heat reaching the center. Not only does the bird take longer, the stuffing itself must reach 165°F to be safe, which is why the per-pound rate is higher for stuffed turkeys.
What if my turkey is still partly frozen on cooking day?
Finish thawing with the cold-water method (about 30 minutes per pound, changing the water every 30 minutes), or roast it anyway expecting roughly 50% more time — but do not stuff a partially frozen bird, and verify 165°F before serving.
